- Dumpling dough:
- 0.5 kg spelt flour
- 0.2 kg wheat flour
- 2 eggs
- 1 tbsp of salt
- 50 ml of oil
- 300 ml of hot water
- Filling for dumplings:
- 1 kg of boiled potatoes
- 1 kg traditional Polish Kabanos sausage
- 0.5 kg spring onions
- 0.1 kg horseradish from a jar
- 0.1 kg French mustard
- 1 tbsp each of salt and pepper
How to prepare filling for spelt dumplings?
Peel the potatoes and bring to the boil, after they are boiled drain and mash them until smooth, add previously fried and chopped Kabanos sausage (leave some for the garnish), spring onions, horseradish, French mustard and spices. Mix thoroughly and set aside in the fridge to allow the flavours to mix.
100 g clarified butter
0.2 kg sour cream – 36% fat
fresh herbs for garnish (lamb’s lettuce, mustard, nasturtium)
How to serve spelt dumplings with Kabanos sausage and potato stuffing
Roll out the dough thinly, cut out circles with a glass or ring, stuff with filling and wrap. Boil the dumplings for a few minutes in salted water, then fry in clarified butter until golden brown. Place the fried dumplings on a plate, add sour cream, fried Kabanos sausage and fresh herbs.
